Ingredients:

4 lbs. boneless corned beef

1 tbsp. olive oil

1 onion, diced

3 carrots, diced

2 celery stalks, diced

2 garlic cloves, minced

1 tsp. ground black pepper

1 can (14 oz) diced tomatoes with tomato juice

1 can (14 oz) diced tomatoes with tomato sauce

1 bay leaves

2 sprigs fresh thyme

6 cups water

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Grease a large baking dish with olive oil.
  2. In a large pot, cook the onions, carrots, celery and garlic over medium-high heat until softened, about 5 minutes.
  3. Add the ground black pepper and continue cooking for an additional minute.
